My go to banana muffin or cake recipe, this is a healthier option for weekly meal prep or for special occasions and it’s vegan so even better!

Ingredients
3 ripe bananas
1.5 cups wheat flour
½ cup any flavorless oil
3 tbsp brown sugar
1 tso vanilla extract
¼ tsp cinnamon powder
2 tbsp rolled oats
2 tbsp chopped walnuts
2 tbsp cocoa powder (vegan)
1.5 tsp baking powder
½ tsp baking soda
1 pinch salt
Instructions
Preheat the oven to 350 F and grease a bread tin or a cake tray with oil.
Take bananas and sugar in a mixing bowl and mash the bananas well or puree them with a hand blender.
Now add the butter, vanilla, cinnamon powder, cocoa powder to the banana and mix well.
Sieve the flour with the baking soda, baking powder, salt , walnuts in the bowl , mix well and add them to the mashed bananas.
Fold the mixture well and rolled oats. Add 3-4 tbsp of water if they mixture is too dry. Pour the mixture into the tray.
Bake at 350 F (180 C) for 30-35 minutes or till a toothpick inserted in the cake comes out clean. Cool it down for 10-15 mins.
