Ragi or Finger Millet flour is a very good source protein and minerals so I try and incorporate it in our Indian breads, cakes , muffins etc. This is a very easy and delicious recipe which is toddler and baby approved :)

Ingredients
1 cup ragi flour (millet flour)
1/4 cup wheat flour
3/4 cup oats or oats flour
1/2 cup jaggery
1 & 1/4 cups curd or yogurt
1/3 cup coconut oil
2 ripe bananas
1 tsp baking powder
1/2 tsp baking soda
pinch of salt
1 tsp vanilla essence
2 tbsp cocoa powder
1 tsp cinnamon powder
1/4 cup toasted pecans
Instructions
In a pan, add the ragi flour and roast while continuously stirring for 4-5 min or till the flour is fragrant. Keep it aside to cool it down.
Preheat the oven to 360 F and grease a cake tray with coconut oil.
In a mixing bowl, add bananas and mash them well. Add jaggery to mixture.
Now add the oil, vanilla, curd to the banana and mix well.
Sieve the ragi flour, wheat floor, oats flour with the baking soda, baking powder, salt, cocoa powder, cinnamon into the banana mixture.
Fold in the mixture well and add chopped pecans. Pour the mixture into the tray and top off with more pecans.
Bake at 360 F (180 C) for 25-30 minutes or till a toothpick inserted in the cake comes out clean. Cool it down for 10-15 mins.
Meal prep for the week or eat them warm right away !! Enjoy 😊 !
