My daughter is not a big fan of oatmeal so I tried the baked oatmeal way to feed her satiating breakfast and she loved it ! Of course anything in muffin format is a hit !
I think I am going to try more flavors with this easy baked oatmeal recipe as this is perfect for busy mornings and great for meal prep !

Serving size : 3 standard sized muffins
Ingredients
1 ripe bananas(large)
1 tsp pure vanilla extract
1/2 tsp cinnamon
1/2 tsp baking powder
1 tbsp maple syrup
1 tsp cocoa powder
1/4 cup almond milk
1 cup oats
pinch of salt
walnuts , chopped for garnish
blueberries for garnish
Cooking spray or cupcake liner
Instructions
- Preheat oven to 360 F and spray muffin tin with cooking spray or place cupcake liners. Set aside.
- In a powerful blender or food processor, add bananas, vanilla, cinnamon, baking powder, salt, cocoa powder, oats, milk, maple syrup and process until smooth.
- Divide batter between 3 openings of previously prepared muffin tin. Top off with some blueberries and walnuts.
- Bake for 20-22 mins minutes, or until golden brown and toothpick inserted come out clean. Remove from the oven, let cool 20 minutes and enjoy!!
