These flattened rice or poha cupcakes are perfect for weekly meal prep and great for quick breakfast or school lunches !
Ingredients
4 Cups Flattened rice (Poha)
1/4 Cup All purpose flour ( or Maida)
4 Tbsp yogurt (or curd)
1 Chopped Potato (small)
1 Chopped Onion (small)
2 Tbsp Chopped Cilantro
1/4 Cup Peanuts
1 Tsp Turmeric Powder
2 Tsp Coriander Powder
1 Tsp Chilli Powder or Chopped Green Chilli
1 Tsp Dry Mango Powder (Amchur)
1 Tsp Cumin seeds
1 Tsp Baking Soda
1 1/2 Tsp Baking Powder
3 Tbsp
Salt
Water

Instructions
-Grind the flattened rice to coarse powder.
-Add all purpose flour, onions, potatoes, coriander, peanuts, spices, salt to taste, 3 tbsp of yogurt and mix them well.
-Add some water if the mixture is too thick and bring it to bread dough (or Roti Dough) consistency. -Set the mixture aside for 10 mins.
-After resting, add oil, rest of yogurt, baking soda , baking powder and mix well.
-Add water, if needed to bring the mixture to thick batter consistency ( not too runny).
-Fill the mixture in muffin tray (oiled if not using cupcake liner) and bake it for 45 mins in 250 F or till top of cupcake browns.
-Cool it completely before removing from mould.Enjoy healthy and easy breakfast cupcakes for a busy week!!
