Gondh Laddu (Edible gum nutty balls)

Gondh or Edible gum (Tragacanth gum) is very widely used Ayurvedic ingredient thats known for having multiple benefits especially during postpartum. Gondh is tasteless and odorless so easy to incorporate in most meals. This recipe is yummy way to have it not only by postpartum mothers ( good for their back) but also by young kids (especially to provide warmth in winters)!


Ingredients

200 gms or ~1 cup of Gondh

2 cups of seedless dates (or as sweet as you need)

2 teaspoon of cardamom powder or 4-5 seeds

4-5 cups of favorite nuts/seeds

( I used almonds, cashews, pistachio, hazelnut, walnuts, sunflower seeds, melon seeds (charmagaz))

~1/2 tablesoons of ghee (clarified butter)


Instructions

-Heat (medium low) about 2 tablespoons of ghee in a large frying pan. Add the gondh and fry them till they bubble up like popcorn and then golden brown.

-Set aside the fried gondh and in same pan add all nuts in order of size and roast them till golden brown

-Switch off the heat and add dates and cardamom. Set aside to cool a bit.

- Once the nuts have cool enough to handle , add all the ingredients in a food processor or blender and coarse grind them.

- Dates act as sweetener as well as binder but add ghee as required to make them into round laddus or balls. This would make about 30-40 small laddus. Store them in air tight container in refrigerator for 3-4 months or outside for 2-3 weeks. Enjoy !!
