Our little one just started solids so sometimes few food items need to steamed or cooked through specifically for the baby. I am always looking for ways to make it easier for us on busy work days to keep food ready early in the morning so we don’t need to worry about baby’s food!
Using the egg bite molds in Instant pot, it’s easy to steam or cook fruits/ vegetables/ rice/ lentils etc in one go for the whole day. You can always use bigger container and batch cook but since we are at home & with limited refrigerator space, this option works really well ! When we eat loads of dishes made in Instant pot, then why not the baby 😂😝!
Vegetarian
Serving Size : 2-3 baby meals
Prep ⏰: 2 mins | Cook ⏰ : 10 mins
Ingredients
Depending baby’s age either chop or place whole fruits and vegetables in the mold - I used some peas, baby carrots , peeled chopped apple
3/4-1 tbsp of rice (in 2 molds)
3/4-1 tbsp overnight soaked lentil (moong dal - wasn’t sure if it will cook so soaked it overnight)
Instructions
Place the ingredients in egg bites mold. Add water for hard veggies like carrrot, beets to cook faster. For rice and lentil, add water till brim of the specific mold.
In 6 Quart Instant Pot, fill the insert with 1 cup of water , place the trivet and place the mold on trivet (I didn’t cover the mold and cooked as-is).
Seal the vent and select “Pressure Cook/High” mode with cook time of 5 mins.
Once done, let the pressure release naturally (NPR).
Remove the food from the mold, set it aside to cool and serve as-is or mashed or blended depending on baby’s age. Enjoy !
UPDATE 02/15/2020:
