GF Choco-chip Cookies

The gluten-free choco chip cookies is nice break from usual cookies and make for healthier snack or dessert! Get kids involved in

baking so they enjoy the sweet treat even

more !

Vegetarian | Vegan* (with substitutes) | GF Serving Size : 15 cookies

Prep ⏰: 15 mins | Cook ⏰ : 40 mins

Ingredients

1 & 1/2 cup almond flour

1/3 cup coconut flour

1/3 cup butter (melted) [*coconut oil]

1/3 cup maple syrup

4 tbsp brown sugar [*coconut sugar]

2 tsp vanilla extract

1/2 tsp baking soda

1/4 cup dark choco chips [*vegan choco chips]

1/4 cup walnuts

1/4 tsp salt


Instructions

  • Preheat the oven to 350 F (180 C) then line a cookie sheet with parchment paper and set aside.

  • In a mixing bowl, add melted butter, maple syrup, vanilla extract and brown sugar and combine well.

  • Stir in almond flour, coconut flour, baking soda, salt and mix well.

  • Then fold in chocolate chips and walnuts.

  • Cover bowl with plastic wrap and refrigerate for 20-30 mins.

  • Once the cookie dough has rested scoop into 1 & 1/2 tablespoon sized balls. Gently press each cookie down slightly

  • Bake for 8-10 minutes or until golden brown.

  • Remove from the oven and allow to cool.

  • Once cooled the cookies can be covered and stored at room temperature for 3-4 days. Enjoy 😊!
