Ingredients
1 & 1/2 cup almond flour
1/3 cup coconut flour
1/3 cup butter (melted) [*coconut oil]
1/3 cup maple syrup
4 tbsp brown sugar [*coconut sugar]
2 tsp vanilla extract
1/2 tsp baking soda
1/4 cup dark choco chips [*vegan choco chips]
1/4 cup walnuts
1/4 tsp salt
Instructions
Preheat the oven to 350 F (180 C) then line a cookie sheet with parchment paper and set aside.
In a mixing bowl, add melted butter, maple syrup, vanilla extract and brown sugar and combine well.
Stir in almond flour, coconut flour, baking soda, salt and mix well.
Then fold in chocolate chips and walnuts.
Cover bowl with plastic wrap and refrigerate for 20-30 mins.
Once the cookie dough has rested scoop into 1 & 1/2 tablespoon sized balls. Gently press each cookie down slightly
Bake for 8-10 minutes or until golden brown.
Remove from the oven and allow to cool.
Once cooled the cookies can be covered and stored at room temperature for 3-4 days. Enjoy 😊!
