Almond flour Banana Muffin

I am always looking for recipes with all-purpose flour alternatives and have shared few recipes before. My latest obsession is almond flour and this recipe was good way to give healthy snack/breakfast to my daughter which not only is yummy but keeps her satiated for longer time ( especially during online school 😂) !

Also, it just needs one food processor or blender for prep work !!

Serving size : 12 standard sized muffins


Ingredients

3 ripe bananas(large)

3 eggs

1 tsp pure vanilla extract

1 tsp cinnamon

1 tsp baking soda

1/2 tsp baking powder

1/4 tsp salt

2 tsp cocoa powder

2 & 1/2 cups almond flour

1/2 cup coconut floor

1/4 cup chocolate chips

Walnuts , chopped

Cooking spray or cupcake liner

(If you like muffins sweeter, add 1/4 cup maple syrup or 4 tsp of brown sugar)



Instructions

- Preheat oven to 350 degrees F and spray muffin tin with cooking spray or place cupcake liners. Set aside.

- In a powerful blender or food processor, add bananas, eggs, vanilla, cinnamon, baking soda + powder, salt , cocoa powder and process until smooth.

- Add almond flour, coconut flour and process just enough to combine. Pause, scrape the walls and process just a bit again to combine. Add chocolate chips and walnuts and stir with a spatula.

- Using an ice cream scoop, divide batter between 12 openings of previously prepared muffin tin and bake for 30 minutes, or until golden brown and toothpick inserted come out clean. Remove from the oven, let cool 20 minutes and enjoy!!
