One of my favorite Mexican dish, this is our go to lunch in time crunch or when we dont want to eat Indian and of course when we see lovely ripe avocados š! House is divided on hard vs soft shell tacos but this time it was my choice š !

Ingredients
Fajitha
1 onion , julienne
1 green pepper, julienne
2 jalapeƱos , julienne
1/4 cup broccoli
1/4 cup corn
1/4 spinach
2 asparagus , chopped
2 tbsp coriander leaves/ cilantro
2 tbsp taco seasoning
1 tbsp oil
salt to taste
* Add other veggies or black beans
Simple Spanish Rice
3/4 cup rice
2 tbsp tomato purƩe or 2 chopped tomatoes
2 tbsp taco seasoning
1 tbsp coriander leaves / cilantro
1 tsp oil
salt
Other items
Guacamole, store bought Taco shells and Salsa
Dump rice, tomatoes, taco seasoning , coriander leaves, salt and oil in instant pot or electric cooker and cook rice as usual! Once itās cooled, keep it aside to cool,
In a pan, heat 1 tbsp oil and add onions, bell peppers, broccoli, spinach, asparagus, jalapeƱos, corn and stir fry them on high for 2-3 minutes.
Now add taco seasoning, salt if needed and cook the mixture for 1-2 minutes and remove from heat. Add coriander leaves from top.
Now assemble the taco by adding layer of rice, then fajitas, some guacamole and salsa ( some sour cream if you like) to taco shells and voila meal is ready š!
