Sorghum Pancakes

We are always looking for ways to make our kid's favorites a little better šŸ˜‰. So with that in mind, the new favorite is jowar pancakes that too with no eggs ! This is a very easy and delicious recipe that even works well for adults šŸ˜œ!


Vegetarian | Vegan | GF

Serving Size : 2 people (6 small pancakes) Prep ā°: 10-12 mins (flax egg) | Cook ā° : 15 mins (whole batter)


Ingredients

  • 1 cup sorghum flour /jowar atta

  • 1 tbsp ground flax / alsi powder

  • 1 teaspoons baking powder

  • pinch of baking soda

  • 1/2 cup almond milk (any plant based milk)

  • 2 tsp coconut sugar

  • 1 teaspoon vanilla extract

  • coconut oil

  • water




  • First step is to make flax egg so in a small cup, add ground flax with 3 tbsp of water. Mix well and set it aside for 10 minutes.

  • In the mixing bowl combine sorghum flour, baking soda and baking powder. Gently stir and add flax egg, vanilla extract, coconut sugar, about 1 tsp of coconut oil.

  • Stir in the milk gradually so everything comes together to make a thick pancake batter.

  • Heat a medium non-stick skillet over a low-medium heat and coat with coconut oil. Scoop 1/4 cup pancake batter and pour into the pan to form a small sized pancake.

  • Cook for 2-3 minutes or until the edges begin to puff and the bottom is golden brown. Flip and cook for another two minutes or until golden brown.

  • Serve hot with favorite fruit and maple syrup and enjoy!
