We are always looking for ways to make our kid's favorites a little better š. So with that in mind, the new favorite is jowar pancakes that too with no eggs ! This is a very easy and delicious recipe that even works well for adults š!

Ingredients
1 cup sorghum flour /jowar atta
1 tbsp ground flax / alsi powder
1 teaspoons baking powder
pinch of baking soda
1/2 cup almond milk (any plant based milk)
2 tsp coconut sugar
1 teaspoon vanilla extract
coconut oil
water
First step is to make flax egg so in a small cup, add ground flax with 3 tbsp of water. Mix well and set it aside for 10 minutes.
In the mixing bowl combine sorghum flour, baking soda and baking powder. Gently stir and add flax egg, vanilla extract, coconut sugar, about 1 tsp of coconut oil.
Stir in the milk gradually so everything comes together to make a thick pancake batter.
Heat a medium non-stick skillet over a low-medium heat and coat with coconut oil. Scoop 1/4 cup pancake batter and pour into the pan to form a small sized pancake.
Cook for 2-3 minutes or until the edges begin to puff and the bottom is golden brown. Flip and cook for another two minutes or until golden brown.
Serve hot with favorite fruit and maple syrup and enjoy!
