Veggie Lentil Balls

This fun and healthy dish can be enjoyed as high protein snack or as lunch box meal( just add in some gravy) !

Ingredients

2 Cups Boiled Black Chickpeas (Kala Channa)

1/2 Cup Grated Carrot

2 Small Potatoes (Boiled)

1/2 Cup Chopped Onions

1/4 Chopped Coriander/Cilantro

1/2 Tsp Turmeric Powder

2 Tsp Coriander Powder

1 Tsp Chilli Powder or Cut Green Chillies (optional)

1/2 Tsp Garam Masala

1/4 Cup Bread Crumbs ( optional)

Salt to Taste

(Note- Add more veggies, greens or other lentils of your choice but keep the mixture low in moisture)




Instructions

-Mash the Black Chickpeas, Potatoes and add all the spices and mix well (Easier in a food processor) -Add carrots, onions, coriander, bread crumbs, salt and mix well.

-Create small balls and Refrigerate for an hour -Shallow fry in Appam pan or air fry for 10 mins at 360 F or till golden brown (coat with some oil of air frying) and serve hot with Ketchup or Chutney. You can also add to any basic gravy to make a high protein Kofta Curry. Enjoy !!
