Idlis are South Indian rice and lentil dumplings that are steamed and extremely healthy. The batter, however, needs to be fermented for few hours which at times I can’t afford. So this is a shortcut recipe that is still healthy enough and since my daughter loves pink so its easy way to sneak in beets and other vegetables !
Ingredients
2 Cups Semolina (Rava or Sooji)
3/4 Curd or Yogurt
1 Cup Grated Beetroot
1/2 Cup Grated Carrot
1/2 Cup Green peppers (Chopped)
1 Onion (Chopped)
1/4 Cup Coriander leaves
2 Tsp Mustard seeds
1 Tsp Cumin seeds
2 Tbsp Oil
1 Tsp Baking Soda (or Eno)
Salt

Instructions
-Mix Semolina and Curd well ( Add water if needed) into thick batter consistency and set aside for 15 mins.
-After resting , add all the vegetables , salt (water if necessary) and mix well.
-In hot oil, temper mustard seeds , Cumin seeds and a a add to the mixture and mix well. -If needed , you can add 1 Tsp of spices like Turmeric, Chilli Powder and Coriander powered. -Add the baking soda , stir well and steam cook using Idli plates (or tray in water bath) for 15 mins or till completely cooked.
-Same batter could be baked in muffin or cake tray at 350 F for 30 mins (Depends on the oven). Meal prep for week ahead for easy BF.
