Many kids may not like spinach at times so this recipe is a kid friendly version that my mom used to get me and my brother to eat spinach!
You can always make ahead part of it and freeze for meal planning!

Ingredients
3 cups spinach
1 tomato , roughly chopped
1 onion , chopped 1 cup cubed paneer / cottage cheese
1 green chilli
1 carrot, roughly chopped
1 garlic pod
ginger (~1 inch) 5-6 almonds
2 tsp turmeric
1 tbsp coriander powder
1 tsp chilli powder (optional)
1 tsp dry mango powder / amchur
2 tsp garam masala
2-3 cloves
1 bay leaf
2 tsp cumin seeds
2 tbsp oil
salt to taste
In a hot pan, add spinach, tomato, chilli, garlic, ginger, almonds and carrots. Cook the mixture for 4-5 mins and set aside to cool.
Once the mixture cools down, blend the mixture to smooth consistency and set it aside.
In a pan, heat oil and add cumin seeds, cloves and bay leaf. Sauté them for 2 mins and then add onions.
Sauté the onions till it’s golden brown and then stir in the blended mixture
Now, add turmeric powder, coriander powder, dry mango powder, chilli powder, garam masala and about 2 tsp of salt.
Mix well, cover the pan and cook the mixture for 4-5 mins. Add paneer cubes and cook for 1-2 minutes in low medium heat. Serve hot with naan , roti or rice and enjoy !
