Masala Pav (Spicy Sliders)

A spin off on masala pav and cheese sliders, this recipe was one of those things that you just make it however you like and it would be amazing šŸ˜ƒšŸ˜‚. This would work lovely for party starters or just a fun family night!


Vegetarian

Ingredients

Bhaji

1 tomato, chopped

1 onion, chopped

1/4 cup peas

2 green peppers, chopped

3 large boiled potatoes

1 tbsp ginger garlic paste

1 tsp cumin seeds / jeera

1 tsp coriander powder

1 tsp chilli powder

1 tsp turmeric powder

3 tsp pav bhaji masala (any brand or homemade)

1/4 cup chopped coriander leaves/ cilantro

2 tsp oil (or butter)

salt to taste

*Add more vegetables to make it more healthy.


Sliders

pav or burger buns(store bought or homemade)

1/2 cup mozzarella cheese

tamarind Chutney (store bought or homemade)

chipotle ranch or any creamy sauce (store bought)

1 onion, julienne

1/4 cup coriander leaves / cilantro

2 tsp pav bhaji masala

butter or oil



Instructions

  1. In a pan, heat oil and add cumin seeds. Wait for cumin seeds to crackle and then add onions.

  2. SautƩ the onions till golden brown and add ginger-garlic paste. After a minute, add tomatoes.

  3. Cook the mixture for 2 mins and add turmeric powder, chili powder, coriander powder and pav bhaji masala.

  4. SautƩ the mixture for 2 mins or till oil starts leaving the sides of the pan and then add peppers, peas, boiled potatoes and mix well.

  5. Add salt and 3-4 tbsp water or enough to cook the vegetables but still keeping thick consistency. Cook the mixture for 3-4 minutes

  6. Mash the vegetables with potato masher so make the bhaji almost like mashed potatoes consistency.Add coriander leaves, butter (optional) and mix well. Keep it aside.

  7. Cut the ladi pav/buns into half and place the bottom half in a oiled/buttered baking pan. Spread some bhaji on the pav in the pan, add some onions, some cheese, drizzle some tamarind chutney and chipotle.

  8. Sprinkle some coriander leaves and cover with top half of ladi pav. Brush some butter or oil on top and sprinkle some pav bhaji masala and coriander leaves.

  9. Bake in preheated over at 350 F for 5-6 mins. Serve hot with some green chutney or ketchup and enjoyyyyyy !
