Lemon Rice

One of the easiest rice dishes for lunch boxes or busy days, this recipe is well loved by adults and kids šŸ˜€!

Ingredients

3 cups cooker rice

2 tbsp peanuts

1 tbsp broken urid dal

1/2 tbsp channa dal

1 tsp mustard seeds

1/2 tsp cumin seeds

1 tsp turmeric powder

1 tbsp curry leaves

1 tbsp coriander leaves

2 green chillies

pinch of asafoetida

juice from 5 lemons

2 tsp oil

salt to taste


Instructions

  • In a pan, heat oil and add peanuts, channa dal and urid dal. Once they are golden brown, add cumin seeds, mustard seeds, chillies, asafoetida and curry leaves.

  • Once the seeds crackle, add the turmeric powder and about 2 tsp of salt.

  • Then stir in the cooked rice and mix till everything is combined well.

  • Add lemon juice and coriander leaves once the mixture cools down. Mix well and serve with potato curry or as-is. Enjoy!
