One of the easiest rice dishes for lunch boxes or busy days, this recipe is well loved by adults and kids š!

Ingredients
3 cups cooker rice
2 tbsp peanuts
1 tbsp broken urid dal
1/2 tbsp channa dal
1 tsp mustard seeds
1/2 tsp cumin seeds
1 tsp turmeric powder
1 tbsp curry leaves
1 tbsp coriander leaves
2 green chillies
pinch of asafoetida
juice from 5 lemons
2 tsp oil
salt to taste
Instructions
In a pan, heat oil and add peanuts, channa dal and urid dal. Once they are golden brown, add cumin seeds, mustard seeds, chillies, asafoetida and curry leaves.
Once the seeds crackle, add the turmeric powder and about 2 tsp of salt.
Then stir in the cooked rice and mix till everything is combined well.
Add lemon juice and coriander leaves once the mixture cools down. Mix well and serve with potato curry or as-is. Enjoy!
