We love Biryani but being a vegetarian there are only a few options like vegetable, paneer, aloo etc. We recently came across Jackfruit Biryani and had to add to our list. It's the perfect new dish to start the New Year’s celebrations!

Ingredients
1/2 kg raw jackfruit
3 cups basamati rice
2 cups vegetables like peas, carrot, beans and green peppers
2 onions , julienne
2 green chillies , finally chopped
2 tsp ginger-garlic paste
3 tsp biryani masala (for mild spice)
2 tsp turmetic powder
2 tsp sesame seeds (while)
2 tbsp cashews
4 bay leaves
2 cinnamon sticks / dalchini
4 cloves / lavang
4 cardamom/ elaichi
1 tbsp cumin/ jeera
1 cup curd/yogurt (any type or replace with cashew paste)
1/4 cup cold milk (any type)
1/4 tsp saffron / kesar
5 tbsp oil
salt to taste
fried onions for garnish (store bought or home made)

Soak rice for 10-20 minutes in water.
Add saffron to cold milk and set it aside.
In a big pot, cook the soaked rice with a bay leaf, 1/2 tsp oil and some salt. Once the rice is about 80% cooked then strain the water and keep it aside.
Cook jackfruit pieces in pressure cooker (1 whistle) with 1 cup water or enough to cover them up, some salt and 1/2 tsp turmeric powder. (In IP, cook for 2 mins on High Pressure). Once cooked, strain the water and keep them aside.
In a big pan, heat remaining oil and add jeera and once it crackles add cloves, bay leaves, cardamom, cinnamon sticks, cashews and sauté for 1 minute on medium high flame.
Now add onions, ginger-garlic paste, chillies, sesame seeds and saute till onions are golden brown.
Stir in jackfruits, peas, carrots, peppers, beans. Add biryani masala, 1-2 tsp salt, turmeric powder, curd and mix well (avoid adding water).
Cook the mixture covered for 5-6 minutes so vegetables are cooked 50-60%. Stir occasionally.
Once the vegetables are about 50-60% cooked, add the cooked rice in a layer covering the vegetables completely. Sprinkle the fried onions and milk with saffron on top of the rice and cook it covered on low flame for 12-15 mins or till the rice looks completely cooked.
Remove from heat and let it cool for 5 minutes and serve warm with salan or raita. Enjoy!
