IP Kasuri Methi Pulao

An amazing dish and something different from usual Pulao, pair this up with any of our Indian curries and enjoy an easy lunch ! It’s perfect for lunch boxes or upcoming festivities, especially which making with Instant Pot

Prep ⏰: 10 mins | Cook ⏰ : 10 mins


Ingredients

2 cup rice (basmati)

1 cup dried fenugreek leaves/ kasuri Methi

1/2 cup chopped onion

2 green chillies

1 star anise

1 bay leaf

2-3 cardamom/ elaichi

1 tbsp cumin seeds / jeera

1/4 cup cashews

3 tsp oil

salt to taste



Instructions

  • In 6 quart Instant Pot, select “Saute/More” mode with cook time of 6 mins.

  • Add oil and when hot, add cumin seeds, bay leaves, star anise and cardamom. Wait for cumin seeds to crackle and then add onions, cashews.

  • Sauté the onions till golden brown and add rice.

  • Sauté for 1-2 mins, add Kasuri Methi, 4 cups of water, salt to taste and mix well.

  • Cancel Sauté mode and select “Pressure Cook/High” mode with cook time of 5 mins. Once done , quick release the pressure (QPR).

  • Use a fork and lightly mix the cooked rice so it doesn't become a lump. Serve hot with raita (yogurt)/pickle, curry and Enjoy !
