Weather it’s Diwali potluck or just a little rich and creamy break from usual curries, this easy recipe works well for any celebration !

Ingredients
1/2 cup cashews /kaju
4 tsp tomato paste
1 onion, chopped
3 garlic pod , finely chopped
1 tsp ginger garlic paste
1/2 tsp turmeric
1 tsp coriander powder
1/2 tsp cumin powder
1 tsp garam masala
1 tsp cumin seeds
2 tbsp fenugreek leaves/ kasuri methi
1/2 cup milk
1 tsp oil
1 tsp butter
salt to taste
Soak cashews in water or milk for 10 minutes.
In a pan, heat oil and butter then add cumin seeds. Once they crackle, add onions, garlic and ginger-garlic paste. Sauté the mixture till onions are golden brown.
Now, add tomato paste, turmeric powder, coriander powder, cumin powder, garam masala and about 1 tsp of salt.
Mix well, and sauté the mixture for 6-7 minutes or till oil starts leaving the sides. Add cashews and some water and cook for 1-2 minutes in low medium heat.
Add milk and cook covered for 1-2 minutes and switch off heat. Add kasuri methi and serve hot with naan , roti or rice and enjoy !
