My obsession for finding better alternatives to wheat/all purpose flour continues😀! And this time tried almond flour pancakes and it worked great ! This recipe is going to be staple in our house going forward.

Serving Size : 2 people (6 small pancakes)
Ingredients
1 cup almond flour
3 tablespoons wheat or *tapioca flour for GF
1.5 teaspoons baking powder
pinch of salt
1/4 cup milk (any kind)
1 egg
1 tablespoon maple syrup
1 teaspoon vanilla extract
3 tablespoons of dark chocolate chips
2-3 tablespoons of water
Butter for cooking
In a large bowl combine almond flour, wheat flour, baking powder, chocolate chips and salt. Gently whisk all ingredients together with a fork.
In the same bowl combine milk, one egg, maple syrup and vanilla extract. Gently stir until everything has come together. Add water if batter is too thick.
Heat a medium non-stick skillet over a low-medium heat and coat with butter. Scoop 1/4 cup pancake batter and pour into the pan to form a small sized pancake.
Cook for 2-3 minutes or until the edges begin to puff and the bottom is golden brown. Flip and cook for another two minutes or until cooked through. Serve with favorite fruit and maple syrup and enjoy!
