A traditional Tamil Nadu dish, usually made in villages with harvested vegetables in clay utensil on fire(adupu/chulha) for Pongal festival, this is a light and flavorful side for Venn Pongal. Following my paternal family traditions, we make this every Pongal/Sankranti with 21 vegetables to celebrate beautiful start to the year! Over the years, its a fun tradition to get kid excited to count and re-count till we reach 21 vegetables !

Ingredients
21- Vegetables , chopped about 3/4 of inch in size
3 tbsp raw rice
1 tbsp cumin seeds/ jeera
1 tsp pepper
3-4 dry red chillies
salt to taste
Note : Avoid using bitter vegetables like Bitter Melon, fruits or sour items like tomatoes, onion, garlic etc. This year I used
1 potato
1/2 sweet potato
1 colocasia /adavi
1 beetroot
1 carrot
1/2 drumstick
3-4 beans
1 cluster beans/govar
2 tbsp peas
3 tbsp edamame
~1 inch ginger
2 tbsp chopped white pumpkin
2 tbsp chopped pumpkin
2 tbsp chopped bottle guard
2 tbsp chopped snake guard
1 small eggplant/ brinjal
1 okra / bhindi
1 tbsp chopped radish
1 tbsp chopped cabbage
1 tbsp chopped pepper/ capsicum
2 tbsp chopped yam /suran
Instructions
In a pan, add rice and roast till its bright white in color. Remove from heat and set it aside. Add cumin seeds, pepper and chillies and roast in medium low for 3-4 minutes or till its aromatic. Set it aside to cool.
In a blender, add all the ingredients and grind them to a fine powder.
In 6 quart Instant Pot, dump all the hard vegetables like potatoes,carrots, drumstick etc with some salt and water (enough to cover the veggies).
Add trivet and vessel with rest of the veggies with some salt(you could skip this as well and water , enough to cover them.
Select “Pressure Cook/High” mode with cook time of 3-4 mins.
Once done, naturally release the pressure (NPR).
Mix all the vegetables and add all spice mix, little water and let it cook on simmer (Sauté mode) while stirring every few mins. Cook for about 8-10 mins or till all vegetables are cooked.
Serve hot with Venn Pongal and enjoy !
