Vrat Sweet Potato Khichdi

This wonderful fasting dish was our favorite growing up! To be honest, this was one of the reasons to observe any kind of fast (later, it was for proper reasons š¤Ŗ). It's an easy, healthy and delicious recipe which can be eaten not only for fasting but even on regular days. For now, it's our spicy desi version of sweet potato hash which my 8 month old loved š (no salt/chillies of course) so will make this more!

Serving Size : 1 cup

Ingredients
2 cups sweet potatoes , shredded*
1 tbsp cumin seeds/ jeera
2-3 dry red chillies
1 tsp dry mango powder/ amchur
1/4 cup crushed peanuts
salt to taste (fast appropriate)
2 tbsp ghee
*Indian sweet potatoes tastes the best but outside India white sweet potatoes taste closest :)

Instructions
In a pan, heat ghee and add cumin seeds. Once they crackle, add dry chillies.
Stir in the sweet potatoes and add about 1 tsp of salt.
Cook for 4-5 minutes covered at medium low heat.
Add amchur powder and crushed peanuts. Mix well and cook for 1-2 minutes.
Top with peanuts and serve hot with curd. Enjoy!
