This wonderful fasting dish was our favorite growing up! To be honest, this was one of the reasons to observe any kind of fast (later, it was for proper reasons đ€Ș). It's an easy, healthy and delicious recipe which can be eaten not only for fasting but even on regular days. For now, it's our spicy desi version of sweet potato hash which my 8 month old loved đ (no salt/chillies of course) so will make this more!

Ingredients
2 cups sweet potatoes , shredded*
1 tbsp cumin seeds/ jeera
2-3 dry red chillies
1 tsp dry mango powder/ amchur
1/4 cup crushed peanuts
salt to taste (fast appropriate)
2 tbsp ghee
*Indian sweet potatoes tastes the best but outside India white sweet potatoes taste closest :)
Instructions
In a pan, heat ghee and add cumin seeds. Once they crackle, add dry chillies.
Stir in the sweet potatoes and add about 1 tsp of salt.
Cook for 4-5 minutes covered at medium low heat.
Add amchur powder and crushed peanuts. Mix well and cook for 1-2 minutes.
Top with peanuts and serve hot with curd. Enjoy!
