Vadagam or Thalippu Vadagam, traditionally a staple in Tamil kitchens, is spice mix made of onions, mustard, sesame oil etc. As a kid, I used to help my Grandmother prepare this in summers and store it for rest of the year. As we finish the last of vadagam my grandmother sent 😞(too old now), I am trying find ways to continue this tradition away from home. For now, sharing this quick and easy vadagam coconut chutney to pair up with South Indian dishes like idli, dosa, upma or rice !

Ingredients 1/4 cup cut or shredded coconut
1-2 tsp vadagam
2-3 red chillies
2 tbsp channa dal
1 small onion , roughly chopped (optional)
1 tsp oil
salt to taste
Instructions
In a hot pan, add oil then channa dal and saute till they are light brown.
Now add onions, chillies and cook till onions are golden brown.
Add coconut and roast the mixture at low heat for 2-3 minutes or till coconut looses most of its moisture.
Once the mixture cools down, add to a blender with about 1/2 tsp salt and grind to coarse consistency. Add a little water if needed.
Store in refrigerator for 1-2 days and enjoy with rice or dosa !
