Ulavacharu (Horse gram Curry)

A tangy and delicious curry made with horse gram, this Andhra delicacy is a very healthy and a lesser known dish. Its amazing for weight loss and maintenance as horse gram is rich in fiber and protein. Note that it needs to be consumed in small quantities (very hard to do but have tošŸ˜›) as its not easy to digest. This dish is great for meal prep as it taste better as days go by ( 3-4 days in refrigerator).

Ingredients

1 cups horse gram, soaked overnight and boiled

1 tbsp mustard seeds

2 tbsp cumin seeds

1 large onion, chopped

2 tbsp garlic, chopped

1 tbsp turmeric powder

3 tbsp coriander powder

2 tbsp chilli powder

1 tbsp cumin powder

3-4 green chillies

a golf ball amount tamarind, soaked in water

2 tbsp jaggery

4 tbsp oil

salt to taste



Instructions

  1. Soak 1 cups of horse gram in water overnight. Pressure cook for 10 mins high with 4 cups water in Instant Pot or 10 whistles in normal pressure cooker.

  2. Once horse gram cools down, strain the water. Blend the horse gram and set it aside. Mix the tamarind water and the left over horse gram water (strained after cooking horse gram).

  3. In a deep pan, heat oil and add mustard seeds, cumin seeds. Once the mustard splatters, add curry leaves, green chillies, onions, garlic and cook till golden brown.

  4. Add tamarind mixture, salt to taste and cook for 5 mins.

  5. Stir in the blended horse gram and let the mixture simmer for 15-20 mins.

  6. Once the mixture thickens, add jaggery and cook for 10 mins.

  7. Serve hot with rice and enjoy! For best results, keep it overnight in refrigerator and enjoy it next day.
