I was looking for chickpea curry that is not usual “chole” recipe and found this ! I tried this in instant pot with few modification and now it’s a family favorite!
Ingredients
5 Cups of Boiled Chickpeas
1 Onion(Julienne)
2 Tomatoes (Chopped)
2 Cups Peppers (various colors - julienne)
1 Cup of Spinach
1/4 Cup of Coconut milk
1 Tsp Turmeric Powder
1 Tsp Chilli Powder
3 Tsp Coriander Powder
1 Tsp Cumin Powder
1/2 Tsp Dry Mango Powder or 1 Tbsp Lemon juice
1 Tsp Garam Masala
1 Tsp Oil
Salt to taste
Cilantro leaves for Garnishing

Instructions
-On a sauce pan, heat oil and add onions and cook till onions are soft. -Add tomatoes and let it cook for a minute
-Add Turmeric Powder, salt(~1 Tsp), Coriander Powder, Cumin Powder, Garam Masala, Dry Mango Powder, Chilli Powder and cook for 2-3 minutes
-Add peppers, spinach, chickpeas and mix well
-Add 2 Cups of water, coconut milk and cook for 5-6 mins. For thicker curry, crush some of the chickpeas and mix well. -Garnish with Coriander and serve as Hearty Soup or with Rice/Roti. Enjoy!!

Shortcut : Add all ingredients and pressure cook for 4 mins if using cooked/canned chickpeas. If using soaked chickpeas, pressure cook for 8-10 mins. For better flavors, cook onions, tomatoes and spices in Sauté mode for 3-5 mins and then add rest of the ingredients and cook.)
