My LO requests for Pizza almost every Friday! So some days its from a local pizza joint and some days we make one with premade base. This time though we tried making a healthy version with Finger Millet (Ragi) flour that is not only healthy but GF as well! The best person to judge a pizza is a KID and this is KID APPROVED šš!

Ingredients
Base
Ā½ cup finger millet flour / ragi flour
Ā¼ tsp baking powder
1 tsp oil
salt as per taste
water
Topping
2 tbsp pizza sauce (home made or store bought)
mozzarella cheese (or vegan cheese)
fresh or dried basil
Instructions
In a pan, heat about 1/2 cup of water (same quantity as ragi flour) and bring to boil. Now add 1 tsp of oil and mix.
In a bowl, mix ragi flour, baking powder, salt and mix well.
Add the mixture to water and mix well. Keep stirring for 3-4 minutes till all the water is absorbed.
Put the warm mixture in a bowl and knead the dough for about a minute.
Divide the dough into two parts and make 2 small rolls. Start rolling the dough on a flat surface into small pizza base and use ragi flour, if its difficult to work with.
Poke few holes in the base with a fork and cook the base on a hot griddle till both sides look a little toasted. You can also bake or air fry at 325 F for 10-12 mins till sides crisp up.
Take the base out of air fryer/pan and spread some pizza sauce, sprinkle cheese and veggies if you like. Pop it back to bake till cheese melts and turns light brown.
Sprinkle basil leaves and if you like, some olive oil/balsamic vinegar and serve hot!
