An Andhra dish from my mother-in-laws kitchen, Mamidikaya pachadi is a raw mango chutney that is eaten with rice. It’s a break from usual chutneys and nice addition to festive
lunches !

Ingredients
1 raw mango, chopped 2 tsp urid dal
1/2 tsp cumin seeds
3-4 dry red chillies
2-3 green chillies
1/2 tsp turmeric
1/4 tsp fenugreek seeds
1/2 tsp salt
1/2 tamarind
2 tsp oil
For Tempering
1 tsp urid dal
1/2 tsp mustard seeds
1/4 tsp cumin seeds
1/4 tsp asafoetida
1 tsp oil
Instructions
In a pan, heat oil and add cumin seeds . Once the seeds crackle, add urid dal.
Once the urid dal turns light brown, add red chillies, green chilies, fenugreek seeds, tamarind and fry for 1-2 minutes.
Allow all ingredients to cool down completely.
Chop the mango into small pieces and set aside half of it aside.
In a mixer grinder, add remaining half of mango, about 1/2 tsp of salt, turmeric, fried mixture and grind to chutney consistency. Do not add water.
In a same pan, heat oil and add urid dal. Once the dal turns golden brown, add mustard seeds, cumin seeds, asafoetida. Once the mustard seeds crackle, remove from heat and add it to the chutney.
Mix well and serve with some ghee and hot rice and enjoy !
