An amazing Andhra recipe from my mother-in-laws kitchen, Koora podi or Poriyal podi is a lentil and spice mix that can be used to sprinkle on vegetables or stuff them with to create variety of curries! Try them and create new family favorites !

Ingredients
3/4 cup chana dal
3/4 cup whole urad dal
3/4 cup white sesame seeds
1/2 cup dry coconut powder or flakes
1/2 cup coriander seeds
8-10 whole red chillies
salt to taste
Instructions
In a pan, dry roast the lentils separately until they turn golden brown/aromatic. After the lentils are set aside, dry roast the coriander seeds till they are aromatic/ greenish brown and set it aside .
In the same pan, put oil and on low flame, sauté the dry red chillies and set it aside.
Add dry coconut powder and sauté till its golden brown. Switch off the heat and just toast the sesame seeds for a minute.
Allow all ingredients to cool down completely.
In a mixer grinder, grind red chillies and coriander seeds to fine powder.
Add in the lentils, sesame, coconut powder into the same mixer grinder and coarsely grind the mixture. You should be able to have a crunchy bite into the lentil powder
Add about 1 tsp of salt and asafoetida and mix the powder well.
Allow the mixture to cool completely before storing in an air tight container. It stores well for 2-3 months.
Pro Tip : How to use Koora Podi The simplest way to use this to just add it on top of semi cooked vegetables and cook for few minutes on simmer and voila!
Best with Eggplants, Potatoes, Beetroot, Ivy gourd(tindora), Bitter gourd, Beans, Carrot, Capsicum/Pepper
