One of the many ways to eat bitter gourd which surprisingly even my daughter loved ! This dish again uses koora podi (curry powder) and so it’s in Andhra style! Very easy to make but is very delicious whether it’s weekday lunch or festive occasion!

Ingredients
2 big bitter melons/ karela (better with small ones)
~8-10 tbsp koora podi*
1 tsp turmeric powder
1 tsp salt
1 tbsp oil

Instructions (Pan)
Cut the bitter-gourd like shown in picture above ( about 1.5 inches in length) and remove the seeds and inner lining ( leave them if they are soft or using small ones)
In medium pot, boil some water with turmeric, salt and add the bittergourd pieces. Cook for 3-4 mins till they are almost cooked (poke with fork or toothpick) and set it aside to cool.
Mix a little water with curry powder(koora podi) so it's easy to stuff. Once pieces cool down, stuff the mixture into the bittergourd pieces well.
In a pan, heat oil and place the stuffed bittergourd pieces and cook at low heat covered.
Turn the pieces every few minutes so all sides cook well.
Turn off flame and serve hot ! Enjoy this yummy curry with rice or roti!

Pre heat the Air Fryer at 350 F and spray some oil. Place the stuffed bittergourd pieces and spray some oil over them.
Airfry for 12-14 mins or till they cooked well and golden brown .
