Muthiya ( or kapuriya) was one of my favorite Gujarati snack growing up. Just added a simple twist to childhood favorite by using sorghum flour and veggies instead of just plain flour. Its again a easy way to sneak in veggies or use alternate flour for kids!

Ingredients
1 1/2 cup sorghum flour / jowar atta
3/4 cup shredded carrot ( or any other veggies)
1 onion, chopped
1 tsp turmeric powder
4 tsp coriander powder
1 tsp garam masala
1 tsp chilli powder (or chopped green chillies)
1 tsp dry mango powder / amchur
1 pinch asafoetida
1 tsp cumin seeds
2 tbsp chopped coriander leaves
1 tsp baking soda ( or eno)
1 tsp oil
salt to taste
1/2 cup of water
For tempering
1/2 tsp mustard seeds
1 tsp cumin seeds
1 tsp sesame seeds / white til
1 pinch asafoetida
2 dry red chillies
1 tbsp curry leaves
2 tsp oil
Instructions
In a mixing bowl, add jowar flour, carrots, onion, turmeric powder, chilli powder, coriander powder, garam masala, dry mango powder, cumin seeds, pinch of asafoetida, coriander leaves , baking soda, oil and 1-2 tsp of salt.
Mix well and then add water to make a dough like wet roti or dinner roll dough.
Make the dough into long hotdog shapes like below and place them onto a well oiled steamer insert for Instant pot or on a steamer basket.
For Instant pot, select ”Steam” option with 6 minutes cook time and NPR for 8 minutes. Make sure to have the steam release valve to seal position. For stove top steamer, cook for 7-8 mins or till a fork or toothpick comes out clean
Once the “hotdogs” or kapuriya (Gujarati name for steamed version) are cooked well, set it aside to cool. Cut them up into 1/2 or bite sized nuggets.
In a pan or IP on Sauté mode, heat oil and add mustard seeds, cumin seeds, sesame seeds, curry leaves, red chillies and asafoetida.
Once the seeds crackle, add the cut up kapuriya or hotdogs and mix them well. Keep on low medium heat for 4-5 mins or till they are a little crispy on the outside.
Garnish with coriander leaves and enjoy them as snacks or light dinner !
