IP Pav Bhaji(Indian Veg Chilli)

An amazing Indian street food, traditionally slow cooked on stove and served with loads of butter and pav(similar to dinner rolls), we started making it in instant pot which makes it quick and healthy recipe for busy nights!

Prep ⏰: 10 mins | Cook ⏰ : 20 mins


Ingredients

1 cup chopped tomatoes

1 cup chopped onion

3/4 cup chopped carrot

3/4 cup chopped beans

3/4 cup peas

1/4 cup chopped green peppers

3 large boiled potatoes

1 tbsp ginger garlic paste

1 tbsp cumin seeds / jeera

3 tsp coriander powder

2 tsp chilli powder

1 1/2 tsp turmeric powder

1 tsp garam masala

3 tsp pav bhaji masala (any brand or homemade)

1/4 cup chopped cilantro

2 tsp oil

2 tbsp of butter (*optional)

lemon juice to taste

salt to taste


*Add other vegetables like beets, cauliflower to make it even more healthy.



Instructions

  1. In 6 quart Instant Pot, select “Saute/More” mode with cook time of 6 mins.

  2. Add oil and when warm, add cumin seeds. Wait for cumin seeds to crackle and then add onions.

  3. Sauté the onions till golden brown and add ginger-garlic paste. After a minute, add tomatoes.

  4. Cook the mixture for 2 mins and add turmeric powder, chili powder, coriander powder, garam masala and pav bhaji masala.

  5. Sauté the mixture for 2 mins or till oil starts leaving the sides of the pot and then add carrots, beans, peppers, peas, boiled potatoes and mix well.

  6. Add 3 cups of water or enough to cover the vegetables and about 1 tbsp of salt.

  7. Cancel Sauté mode and select “Pressure Cook/High” mode with cook time of 6 mins. Once done , naturally release the pressure (NPR).

  8. Cancel “Keep Warm” mode and select “Sauté” mode with cook time 4 minutes. Mash the vegetables with potato masher so make the bhaji or chilli to batter like consistency.

  9. Add coriander leaves and butter (if not vegan) and mix well. Garnish with some raw onions, few drops of lemon juice and coriander leaves and serve with some toasted Pav or as-is. Enjoy !
