A recipe from my Grandmother's kitchens, I haven't eaten it anywhere else (its probably not mainstream) and wanted to share this yummy snack! A dish for Diwali or for winters, its usually made with maida/all purpose flour and deep fried which I actually did for Diwali :). But for day to day snack, substituted with wheat flour and air fried it and voila - a healthier version! Try it and make your own version of this!

Ingredients
Dough
1 cup whole wheat flour
1 tbsp oil
water
Filling
1/2 besan/ chickpea flour
1 tsp turmeric powder
2 tsp coriander powder
1/2 tsp cumin powder
1/2 tsp garam masala
1 tsp chilli powder (optional)
1 tbsp oil
1 tsp asafoetida (yes 1 tsp! Need less if its crystal version)
salt to taste
In a mixing bowl add wheat flour, 1/2 tbsp oil and mix well. Add about 1/4 cup of water or as needed and start kneading the dough.
Add 1/2 tbsp of oil and knead the dough for about 4-5 minutes into soft dough like for chapathi/ dinner rolls. Set it aside.
In a pan, add chick pea flour (besan) and roast it, stirring continuously, till its golden brown and aromatic.
Add cumin powder, turmeric powder, garam masala, coriander powder, chilli powder asafoetida and mix well. Note : Adjust the spices if making for kids.
Roast for 1-2 minutes and add salt (~ 1-1 1/2 tsp, need a little more as its a filling and dough doesn't have any salt).
Remove from heat and slowly add oil to make it into a sand like mixture that is easy to handle.
Now, take dough of size of a grape, roll it a little (use oil rolling instead of wheat flour) and fill about chickpea flour mixture (~1/2 tsp) , close it up and roll again. Make sure to roll them quiet thin and pork them with fork/knife they don't balloon up.
Oil the air fryer, add matri's in single layer and just brush them with a little oil. Air fry at 300 F for 8-10 mins or till golden brown. Cool them down and enjoy with hot cuppa tea or coffee!
