Gud Papdi (Wheat Flour barks)

Gud papdi is a simple Indian sweet that’s easy to make and a little bit healthier than any all-purpose flour (maida) dishes ! One of my favorites growing up , so had to include it in my Diwali sweets this year !


Vegetarian

Serving Size : 8 (as dessert)

Prep ⏰: 5 mins | Cook ⏰ : 20-30 mins


Ingredients

1 1/4 cup wheat flour

1/2 tsp cardamom powder / elaichi

1 1/4 cup jaggery

1 1/4 cup clarified butter / ghee

pinch of nutmeg

1 tbsp of dry fruits (cashews,almonds, pistachios)


Instructions

  • In a pan (preferably non stick with heavy bottom), heat about 3/4-1 cup ghee and stir in the wheat flour and mix well.

  • Keep stirring the mixture on low medium heat till wheat flour is golden brown, aromatic and ghee starts leaving the sides. Add more ghee if the mixture is too dry.

  • Add cardamom powder, nutmeg, nuts and mix well.

  • Remove the pan from heat and keep stirring so mixture doesn’t burn due to residual heat.

  • Let the mixture cool down for 2-3 minutes and then stir in the jaggery. Mix well till jaggery is combined well. m

  • Take a greased (ghee) plate or cookie tray and spread the mixture and set it to about 1/4-1/2 inch thickness. Add more nuts on top press it in.

  • Cool down for 3-4 hours and break into pieces and enjoy this yummy dessert!
