Gud papdi is a simple Indian sweet that’s easy to make and a little bit healthier than any all-purpose flour (maida) dishes ! One of my favorites growing up , so had to include it in my Diwali sweets this year !
Vegetarian
Serving Size : 8 (as dessert)
Prep ⏰: 5 mins | Cook ⏰ : 20-30 mins
Ingredients
1 1/4 cup wheat flour
1/2 tsp cardamom powder / elaichi
1 1/4 cup jaggery
1 1/4 cup clarified butter / ghee
pinch of nutmeg
1 tbsp of dry fruits (cashews, almonds, pistachios)
Instructions
In a pan (preferably non stick with heavy bottom), heat about 3/4-1 cup ghee and stir in the wheat flour and mix well.
Keep stirring the mixture on low medium heat till wheat flour is golden brown, aromatic and ghee starts leaving the sides. Add more ghee if the mixture is too dry.
Add cardamom powder, nutmeg, nuts and mix well.
Remove the pan from heat and keep stirring so mixture doesn’t burn due to residual heat.
Let the mixture cool down for 2-3 minutes and then stir in the jaggery. Mix well till jaggery is combined well. m
Take a greased (ghee) plate or cookie tray and spread the mixture and set it to about 1/4-1/2 inch thickness. Add more nuts on top press it in.
Cool down for 3-4 hours and break into pieces and enjoy this yummy dessert!
