My first try at poli or bobbatlu which is traditionally filled channa dal, jaggery and coconut but this coconut jaggery recipe are pretty popular too! Try and enjoy !

Ingredients
For Dough
2 cups all purpose flour / maida
1 tsp turmeric powder
2-3 tbsp clarified butter/ ghee
a pinch of salt
water as required, to knead dough
For Filling
1 1/2 cups dry coconut (I used sweetened flakes)
1 1/4 cups jaggery
1/2 tsp cardamom powder
pinch of nutmeg
2 tsp ghee
a pinch of salt
Instructions
In a large mixing bowl take all-purpose flour and add turmeric powder, about 2 tbsp of ghee, about 2 tsp of salt and mix well.
Add some water and knead the mixture into soft dough.
Add 1/2 tbsp ghee and knead again for 3-4 minutes. Rest the dough for 10-20 minutes covered with damp cloth.
While the dough is resting, start on coconut filling. In a pan, heat 1 tsp of ghee and add coconut flakes. Keep stirring till the flakes a golden brown and set it aside to cool.
In same pan, add 3-4 cup water and add jaggery to it. Bring the mixture to boil and add coconut, cardamom powder, nutmeg and mix well.
Keep stirring the mixture till it forms into a think paste. Set it aside to cool.
Now similar to making stuffed parathas, take a small ball of dough, spread it a bit with your thumb to make a cup like shape and add the coconut mixture. Cover the mixture and make it into a ball again.
Now on hard surface, using a rolling pin, flatten the ball into thin polis or paratha/tortillas. Use flour or ghee to help with rolling.
Now on a hot griddle, put some ghee and cook both sides poli on medium low till they are golden brown. Serve hot and enjoy this sweetness !
