Boda Paratha (barbati/chawli/lobhiya/long beans) was my favorite as a kid and even now that would probably be my most favorite ❤️. One of the recipes my Nanaji (Grandpa) passed on to us , this used to be my request for birthdays in Banaras🥰.Parathas are easiest and most yummy way to add veggies to kid’s (or adults 😜) diet and this is a must try !

Ingredients
2 cups chopped long beans / barbati
1 cup boiled potatoes, mashed ( for better results use uncooked potatoes but will take longer to cook)
1 tsp turmeric
1 tbsp coriander powder
1- 1/2 tsp garam masala
1 tbsp cumin seeds
1 tsp dry mango powder/ amchur
2 tsp chilli powder
3 tbsp coriander leaves
1 tbsp oil
salt to taste
In a pan, heat oil on medium high then add cumin seeds. Once they crackle, add long beans.
Now, add about 1 tbsp salt and cook with lid on for 4-5 minutes.
Now add boiled potatoes and mix well.
Add turmeric powder, coriander powder, dry mango powder, chilli powder, garam masala and mix well.
Cook the mixture with a lid for 5-6 minutes. Add a little water if the mixture seems too dry.
Lightly mash the mixture with potato masher or spatula so everything is well combined.
Top it with coriander leaves and mix well.
Store for 2-3 days in refrigerator in an air tight container.
Use to make stuffed parathas / sandwiches or wraps and enjoy !
