A quick and easy curry, Beans Patoli or Dal Usli is one of our favorites! The base is standard so just substitute beans with any number of *veggies and you get a variety of delish recipes. This lovely South Indian dish is perfect for busy day side!

Ingredients
3 cups beans, chopped
3 red chillis
3 tbsp channa dal
1.5 tsp mustard seeds
1/2 tsp cumin seeds
1 tsp urid dal
1 tsp turmeric powder
2 tbsp curry leaves
2 tbsp oil
salt to taste
*Substitute with Cluster beans (Guar), Potatoes, long beans, banana flowers, cabbage etc !
Instructions
Soak the channa dal and chillies in some water for 2-3 hours.
In a blender, add channa dal, chillies, turmeric powder, ~1.5 tsp of salt and blend to a coarse mix.
In a pan, heat oil and add mustard seeds, cumin seeds, curry leaves, urid dal and sauté till urid dal is golden brown.
Stir in the blended mixture and mix well. Cook the mixture on medium low for 4-5 minutes covered.
Add beans and cook for 4-5 minutes or till beans are soft.
Serve with hot rice or roti ! Enjoy !
