One of the South Indian dishes that is made with rice batter, this delicacy from Kerala is a nice break from usual breakfast items đ!

Ingredients
2 cups rice (Idli rice preferably)
1/4 cup coconut
1 tsp baking powder (or eno)
salt to taste
Instructions
Wash rice thoroughly and soak it in water for about 4-5 hours (or overnight)
In a blender, add the rice, coconut and blend to smooth texture, like cake batter (add water as necessary).
Process of Rue(added for fermentatio): In a hot pan, take 2 tablespoons of the mixture in 1/2 cup of water and cook it for 3-4 minutes or till the mixture is translucent lump.
Once the lump cools down , add it to a blender with little bit of rice-coconut mixture and blend it smooth. Stir this back into the rice-coconut batter.
Place the batter in warm place for 6-7 hours or overnight for fermentation.
Once you are ready to prepare appam, just add a bit of salt, eno or baking soda and mix well.
In a hot non stick kadai/wok, add one scoop of batter and spread it around (similar to omlette). Cook it covered for 1 minutes and remove from pan. Repeat this till you go through rest of the batter.
Serve hot with sweetened coconut milk or channa or your choice of curry and enjoy !
