Adai (Savory Lentil & Rice pancake)

This traditional South Indian dish , usually eaten for breakfast, is a nice high protein alternative to Dosas!


Ingredients

1 Cup of Rice

1 Cup of Tool Dal

1 Cup of Channa Dal

2 Tbsp Fennel Seeds (Saunf)

1 Finely chopped Onion

1/4 Cup Chopped Mint

5-6 Red Chillies

Salt to taste



Instructions

- Soak Rice and lentils in water for 3-4 hours

-Make a slightly coarse batter with rice, lentils, Chillies , Fennel seeds and salt. Add water as needed to make the batter slightly thicker than usual pancake consistency.

-Pour the batter on hot oiled skillet, add some onions and mint leaves on top and cook till golden brown on both sides.

-Serve hot with any South Indian Chutney or as-is. Enjoy!!
